I’m offering a little mom snack hack today so thanks for starting your week with me right here on Ranch Raised!

With 4 kids home 100% of the time, its like my kitchen never shuts down. I am always looking for fresh ideas for meals and snacks. My teenage girls occasionally offer up ideas that they spot online. That is exactly what happened this summer when my oldest daughter said, “could we buy some dates? I have something I want to try.” I am always game to let my kids experiment in the kitchen and boy, this one was a winner!

These little jewels are a no bake treat that pretty much taste like a Snicker bar only they are healthier, the kids can throw them together, and they are a perfect frozen sweet treat in the afternoon.

Start by splitting around a dozen dates and pulling out the seed pit. We just lay them out flat on a little cookie sheet that will fit easily in your freezer. Then fill each date with a “schmeer” of peanut butter, such a technical term that is probably over a teaspoon of peanut butter. Then we make our own chocolate magic shell topping which is a half a cup of chocolate chips and a heaping teaspoon full of coconut oil and melt together. Drizzle the chocolate over the top of the peanut butter filled dates. Top with flaky sea salt and put in the freezer for a few hours. You gotta let me know how much you love this when you try it!
