It has always been intriguing to me how half of the world stops for federal holidays and half of the world just keeps turning. Maybe it is my perspective as someone who has grown up in production agriculture and that “cows have to be fed everyday” mentality. But anyway…..

We had a non-stop weekend of being at the Nebraska State Fair supporting our older girls showing goats, sheep, and cattle but then my little kids put their little foot down yesterday and begged to stay home. So that is what I did with them. Which allowed me to get caught up on some canning! But first I needed to organize my basement pantry just to see what needed restocked and what I had enough of to make it through the year.

I finished the peaches with some peach syrup that we will enjoy in peach tea and on pancakes, waffles, and French toast all winter long. I also made my last batch of peach salsa and that is all for me, okay just kidding, or not! On to pears! I got a batch of pear sauce done which my little guy will love. I have just enough pears left to do a batch of Salted Caramel Pear Butter which is a delicacy in our pantry!

My tomatoes are consistently turning bright red which makes picking them a daily chore. So far, I’ve kept up with their bountiful blessing getting them turned into juice and salsa. Cheer me on so that the tomatoes don’t overtake me!

Karina ranches with her husband, Marty, and 4 children near Broken Bow, NE. She grew up in western NE, with roots also in southwest SD. The cattle industry and raising kids is her passion.

Watching the cattle industry go the path that it has gone, she could no longer sit quietly at home checking cows, fixing fence, and doing all the everyday tasks wondering when some else was going to make it all better. As she became more active and outspoken on industry issues, she was asked to join the R-CALF USA staff in September 2020 as the Checkoff Petition Campaign manager. That position transcended into her current role as full time Field Director for R-CALF USA.
