I’m sending us out of Beef Month with a bang! Thanks for joining me today on Ranch Raised!

I thought it was only fitting to celebrate Beef Month with a final beef recipe. This is my smoked roast beef recipe, of which I made over 25 pounds for our branding day dinner! I’m just going to consider it our lunch meat replacement around here.

Boneless roast like the Pike’s Peak or Tri-tip are preferred. But I smoked a bunch of chuck roasts for branding it worked just fine.

I seasoned the roast generously with Rick’s Seasoning Salt of course, but you use your favorite rub or blend. I placed it on the smoker at 250 degrees. For one 3-4 pound roast it will take around 4 hours to reach an internal temp of 160 degrees! I then let them cool overnight and I ran them through the meat slicer the next day. I rewarmed the sliced, smoked roast beef in beef broth in the crock pot or roaster.

I also like the idea of cubing some of the smoked meat up to throw in hashbrowns for a hearty breakfast. And how about smoked beef salad sandwiches! YUM!
