Today’s recipe checks all the boxes for this time year! Welcome back to Ranch Raised!

Today’s recipe is hearty, one pot soup that will stick to your ribs. It is versatile and can be used to help use up leftover beef and veggies.

It was my grandma Wanda’s favorite soup for all of the forementioned reasons. It is budget friendly and makes a nutritious meal with ingredients you already have on hand.
Let’s get this Beef & Barley soup started!

Simmer 5-6 cups of beef broth. Add one 16 oz bag of pearl barley and simmer according to directions.

Add 2-3 sliced carrots and 3 chopped celery stalks. You can throw in any veggies that your family likes.

Add 2 cups of beef! It could be browned ground beef, leftover roast or steak. I used beef bacon in our soup last night for a smokey flavor.

Home cooked meals on these cold nights are a perfect way to enjoy time with your family. This recipe will feed a family of 6-8 pretty easily because that barley is so hearty. This soup could also be started on low, in the morning, in your crock pot and be left all day to work its magic. Dinner will be ready for you when you get home from work.
