How about breakfast for dinner? Just a little thought I’m pondering today on Ranch Raised.

I was alerted that today was National Pancake Day and it had me thinking that I needed to ask all of you, “does anyone else have a family that loves having breakfast for dinner?” Well, I do! 

Sometimes at the end of a very long day, when meal prep didn’t happen and mothering fatigue has taken over, like during calving season, it is time to win the day by declaring it is “Breakfast for Dinner Night!” And the crowd just seems to cheer!

So in an effort to you give you a pass on being creative tonight but still get your family fed let’s all just celebrate National Pancake Day! If you need a recipe, here is my Sheet Pan Pancake recipe that is a winner!

Preheat your oven to 425 degrees. Whisk together 1 ½ c of milk, 2 large eggs, 4 tablespoons of melted butter, 1 tsp of vanilla extract, and a ¼ cup of sugar. Then fold in 2 cups of flour, 1 Tablespoon of baking powder, and ¾ teaspoon of salt. I stirred in a cup of frozen raspberries that I picked last fall. 

Pour batter into an 11×17 one inched rim baking sheet that you have sprayed with non-stick spray. Then I sprinkled on a 1/2 cup of semisweet chocolate chips. This chocolate raspberry combo is our new favorite and is sweet enough you don’t even need syrup! Bake for 15-20 minutes until the batter is just set and firm.
