Karina Jones is a real-life ranch wife in the Nebraska Sandhills and one of the most highly sought-after speakers in the cattle industry nationwide!

It is shredded beef meal idea day here on Ranch Raised! As I said yesterday, I consider shredded roast beef a blank canvas and I am the Picasso.

If you have a roaster, you can actually make up a lot of these beef roasts and then have all that shredded meat and broth to make up multiple meals.

My first inspiration always tips its hand to what to do with the roast beef and I focus on all that good broth as a secondary meal option. If you are only using a 3-4 lb roast you can usually stretch that to get 2-3 meals for your family. The first meal I usually make is shredded BBQ beef sandwiches on buns.

Do not ever throw out all that good broth! That is a meal, my friend! As long as you have at least a cup of left-over roast beef and all that broth then you have the perfect starting point for either a beef and veggie soup, beef and barley soup, or my family’s favorite, beef and noodles! I also can use this broth to make a gravy for hot beef sandwiches.

I also prefer to use shredded beef over ground beef for my enchiladas, just add some taco seasoning to the shredded beef and stuff your enchiladas. My husband and I love beef salad sandwiches for a quick lunch when the kids are at school! Another meal option I do when there is less than a cup of roast beef is BBQ Beef pizza! So easy and crowd favorite!
