It’s fair week, so that means I like to take this week so share with you some of our favorite 4-H baking recipes! If you are like me you are always looking for a good, standard quick bread recipe that can be used for muffins, loafs, and even baked donuts.
Today I am sharing our Orange-Cranberry Muffin recipe. You can change this recipe up and do a Lemon-Blueberry variety instead. We also love baking these in our brownie pan or our donut pan. The applesauce helps them stay so moist, but we also will sub shredded zucchini if we have some.
Here we go Orange-Cranberry Muffins:
Instructions:
1. Preheat oven to 350 degrees Fahrenheit. Spray muffin pan with a non stick spray.
2. Mix dry ingredients 2 cups of flour, 2 teaspoons of baking powder, and ½ tsp salt.
3. In a separate bowl, beat 2 eggs. Add ½ cup canola oil and 1 1/3 cup sugar and blend well. Add ½ cup milk and 15-20 drops of a pure orange essential oil. Fold in 1 cup applesauce.
4. Add dry mix to wet ingredients until combined and then fold in 1 cup of cranberries, fresh or frozen.
5. Pour batter into muffin tins.
6. Bake at 350 for 20 minutes or until a toothpick pulls out clean.

Watching the cattle industry go the path that it has gone, she could no longer sit quietly at home checking cows, fixing fence, and doing all the everyday tasks wondering when some else was going to make it all better. As she became more active and outspoken on industry issues, she was asked to join the R-CALF USA staff in September 2020 as the Checkoff Petition Campaign manager. That position transcended into her former role as full time Field Director for R-CALF USA.
