We had fun weekend getting out to a few lamb jackpot shows! Monday showed up and it is back to the grind. Thanks for joining me today on Ranch Raised.
This morning we were greeted with some cooler temps which gets me in the mood to turn on the oven and do a little baking. And of course my crew loves a hearty breakfast so we started out day with one of our favorites, the sheet pan pancake, baked in the oven.
Preheat your oven to 425 degrees. Whisk together 1 ½ c of milk, 2 large eggs, 4 tablespoons of melted butter, 1 tsp of vanilla extract, and a ¼ cup of sugar. Then fold in 2 cups of flour, 1 Tablespoon of baking powder, and ¾ teaspoon of salt. I stirred in a cup of frozen raspberries that I picked last fall.
Pour batter into an 11×17 one inched rim baking sheet that you have sprayed with non-stick spray. Then I sprinkled on a 1/2 cup of semisweet chocolate chips. This chocolate raspberry combo is our new favorite and is sweet enough you don’t even need syrup! Bake for 15-20 minutes until the batter is just set and firm.
This would make a great make ahead breakfast that can be baked the night before. And honestly, one pan will feed my family for breakfast and provide some snacking through out the day.
