My house has been a bustling place with hosting my sister and her kids for a few days, so I was looking for an easy way to crank out a breakfast to feed a crowd. I settled on a sheet pan pancake and it was a total winner, so I want to share it with you today. It is super easy and chances are you already have everything you need on hand!
Preheat your oven to 425 degrees. Wisk together 1 ½ c of milk, 2 large eggs, 4 tablespoons of melted butter, 1 tsp of vanilla extract, and a ¼ cup of sugar. Then fold in 2 cups of flour, 1 Tablespoon of baking powder, and ¾ teaspoon of salt. I also added 2 ripe bananas and ½ cup of mini chocolate chips. I can’t wait to try some frozen berries next time!
Pour batter into an 11×17 one inched rim baking sheet that you have sprayed with non-stick spray. Bake for 15-20 minutes until the batter is just set and firm.
We topped ours with a little bit of real maple syrup! This would make a great make ahead breakfast that can be baked the night before. And honestly, one pan will feed my family for a few days, which I am really excited about!
