Karina Jones is a real-life ranch wife in the Nebraska Sandhills and one of the most highly sought-after speakers in the cattle industry nationwide!

With less than a week away from Thanksgiving, lets take a look at an American favorite that might be on your table! Thanks for tuning in to Fun, Fact Friday, right here on Ranch Raised.

Cranberries are a show stopper on any holiday table. They are bursting with tart flavor and are at the top of the list of healthy foods. Besides being high in vitamin C, manganese and fiber, cranberries are rich in phyto-nutrients, particularly antioxidants, which are essential for all-round wellness.

The U.S. harvest season for cranberries runs from around mid-September until the end of October, just in time for Thanksgiving.  3 of the top cranberry states are Wisconsin, Massachusetts, and Oregon. Wisconsin, the largest producer of cranberries harvesting around 60% of our domestic production.

Production of cranberries has gradually increased since 1990 as consumption has expanded from seasonal to year-round. This increase is driven in part by the rise in cranberries used in processing, mainly for juice and juice blends.

There is no comparison between home cooked cranberry sauce and the canned stuff. I challenge you to make home cooked cranberry sauce. It is so easy and so flavorful! Just dump a bag of cranberries into a pot, add just enough water to cover the bottom of the pot and add ½ to 1 cup of sugar depending on how sweet you want it. Just simmer away until it is the consistency you would like.

Have a great weekend from all of us at Your Ag Network.

Karina ranches with her husband, Marty, and 4 children near Broken Bow, NE. She grew up in western NE, with roots also in southwest SD. The cattle industry and raising kids is her passion.

Watching the cattle industry go the path that it has gone, she could no longer sit quietly at home checking cows, fixing fence, and doing all the everyday tasks wondering when some else was going to make it all better. As she became more active and outspoken on industry issues, she was asked to join the R-CALF USA staff in September 2020 as the Checkoff Petition Campaign manager. That position transcended into her former role as full time Field Director for R-CALF USA.

Listen to Ranch Raised on a Your Ag Network hometown station or www.youragnetwork.com where she talks about her daily life on the Jones Ranch.

Cattle producers are her people. She will meet you at the county fair, at the sale barn, or anywhere the dusty trail leads.
