Today is National Pickle Day! I couldn’t pass this chance to talk about one of my favorite products that I preserve in my home kitchen. The term pickle comes from the Dutch word pekel, meaning brine. In the United States, the word pickle typically refers to a pickled cucumber. However, just about any fruit or vegetable can be pickled.
We consume a phenomenal 5,200,000 pounds of pickles each year in the United States. While pickles can be high in sodium, they are a good source of vitamin K. Snack on a pickle to celebrate, but don’t stop there. This snack is multipurpose. They make delicious additions to salads and sandwiches. Grind them up and make a relish. Experimenting with pizza? Top it with some pickles. If your burgers or Sloppy Joe is missing a little zing, add some pickles.
While this holiday has been celebrated for 70 years on various days. In 1949, the first observance began with encouragement from the Pickle Packers Association.
I went hog wild canning pickles this summer. I had a generous neighbor who shared her overabundance of cucumbers. I have some nieces and a nephew who delight in Aunt Karina’s pickles, so my daughter and I just kept pickling until we about ran out of jars.

Watching the cattle industry go the path that it has gone, she could no longer sit quietly at home checking cows, fixing fence, and doing all the everyday tasks wondering when some else was going to make it all better. As she became more active and outspoken on industry issues, she was asked to join the R-CALF USA staff in September 2020 as the Checkoff Petition Campaign manager. That position transcended into her former role as full time Field Director for R-CALF USA.
