Karina Jones is a real-life ranch wife in the Nebraska Sandhills and one of the most highly sought-after speakers in the cattle industry nationwide!

You are gonna go bananas over today’s episode, so thanks for joining me right here on Ranch Raised! It has been a while since I have spoken of my love of baking, so when I saw that today was National Banana Day, I knew it was time to launch a recipe that I have never shared!  

Using your over ripe bananas to bake with is a perfect way to add nutrients & sweetness, without sugar, while being frugal and avoiding food waste. I love adding over ripe bananas to pancake or waffle batter to change up the flavor! But nothing beat banana bread or muffins! So here is my recipe! 

Combine the wet ingredients first: 1/3 cup of sour cream or plain yogurt this keeps them perfectly moist, ½ cup of unsalted softened butter, 2 eggs, and a teaspoon of vanilla. Whisk in 2 cups of mashed bananas and then fold in your dry ingredients: ¼ teaspoon of salt, 1 teaspoon baking soda, 1/3 cup of brown sugar and 2 cups of flour. No one will be mad if you add a cup of chocolate chips. Bake at 350. I prefer to use either mini loaf pans which bake for around 20-25 minutes or muffin pans which bake for around 15 minutes. Your banana goodies will be done when you can insert a toothpick in the center and it pulls out clean.
