Karina Jones is a real-life ranch wife in the Nebraska Sandhills and one of the most highly sought-after speakers in the cattle industry nationwide!


Welcome to fun, fact Friday! As spring gardens perk up and cool season crops roll in, how could we not focus on the bright pink, radiant radish! It is a garden staple in back yard gardens and a definite attention getter in any produce section.

There are essentially 2 different types of radishes. The round, globe type and the elongated root type. I personally grow both because I just love the variety and the fun they bring to my produce basket when I am harvesting in my garden.

They may be small, but radishes pack a nutritional punch. Radish greens are high in vitamin C, which is an anti-oxidant that helps boost the immune system. Because of their spicy flavor, radishes have been used to soothe sore throats and clear sinuses. Radishes contain phytonutrients that have been shown to help fight cancer.
Radishes can be served both raw and cooked, which creates cross-merchandising opportunities, including salad dressing, bagged salad, croutons and other salad vegetables.

I am known to have an obsession with pickled radishes that I put on my salads! I just sliced them, covered them in white rice wine vinegar and added some mustard seeds and dill and let them hang out in the refrigerator for a few days. But, I also LOVE roasting radishes from my garden and serving them alongside a juicy Jones Ranch steak! What a way to celebrate both Fresh Fruit & Veggie Month and National Beef Steak Month!

Karina ranches with her husband, Marty, and 4 children near Broken Bow, NE. She grew up in western NE, with roots also in southwest SD. The cattle industry and raising kids is her passion.

Watching the cattle industry go the path that it has gone, she could no longer sit quietly at home checking cows, fixing fence, and doing all the everyday tasks wondering when some else was going to make it all better. As she became more active and outspoken on industry issues, she was asked to join the R-CALF USA staff in September 2020 as the Checkoff Petition Campaign manager. That position transcended into her current role as full time Field Director for R-CALF USA.
