Today might seem like another observance of a silly holiday, but when I saw it, I did give a giggle, because I actually have this on my “to-do” list, this week. Call me old fashioned or crunchy, but the longer I am doing this parenting thing, the more committed I become to doing my best and that definitely is amplified in the kitchen and what I feed my family.
I have become more intentional the last few years about leaving the commercial made convenience snack foods at the store and making my own at home. One of the easiest places to start is with granola bars! And today just so happens to be National Granola Bar Day! I make these bars often and they are fail proof, so here is my simple recipe for Peanut Butter Chocolate Granola Bars!
Preheat your oven to 325 degrees and line a 9×9 pan with parchment paper. Combine
2 cups oatmeal, 6 T creamy PB, 6 T honey, 1/2 C sourdough discard, and 1 t salt. Press into your pan and sprinkle 1/2 cups of mini chocolate chips on top.
Bake at 325 for 20 minutes or that oatmeal is golden brown. Let cool and then cut into bite size pieces.
