I’ve got a new fall supper idea for you so thanks for joining me today on Ranch Raised.

There is something about eating seasonally that has resonated with me. Eating seasonally means meal planning and enjoying fruits and vegetables when they are in season. This is when you can usually find them fresh in your grocery stores and farmers markets. This is when they are at the their peak of nutritional value and also when they are usually the best financial value.

This time of year I start thinking of all the ways that I can incorporate the sweet potato into our meals. My pickiest daughter loves sweet potatoes so that directed me to cooking with them more years ago and the rest of my family has fall in love with them too.

Roasted Sweet Potato Bowls are one of our favorite ways to use them and their versatility really shines. 2 large sweet potatoes feeds my family of 6 making this a budget friendly option. I peel and cube them into nickel sized cubes. I drizzle with a healthy dose of avocado or olive oil and then season well with salt and pepper. I roast them at 350 for around an hour but if you don’t have that much time, kick the heat up. I like to brown 2 pounds of hamburger, drain the grease and then I split it into two options. I put BBQ sauce on half and the other half I finish off to be a taco meat. My family loves topping the roasted sweet potatoes with the option of their choice and of course you can add other toppings.
