Do we have any lemon lovers out there? My husband’s favorite flavor is lemon, so my girls are always looking for lemony treats to satisfy his sweet tooth. My middle daughter found this recipe and played with it. You can use any cake mix, but once she whipped it up using a lemon cake mix, she renamed the entire recipe “Lemon Heaven Cookies” and she entered them in the county fair. This recipe is easy enough for even the most beginning baker and these cookies stay really moist for days!
While your oven is preheating to 350 degrees, mix a lemon cake mix with 1 egg and 2 cups of Cool Whip. That’s it! That’s your cookie dough! This cookie dough will be super sticky, so you may want to pop it in the fridge for a bit to firm up. I really recommend using a small cookie scoop but if you don’t have one just use a spoon to drop a ball into a bowl of powdered sugar and cover your little dough ball really well. Place on a greased cookie sheet and bake for 10 minutes.
