Welcome to National Fresh Veggie Day which seems like a perfect day to celebrate here on Fun, Fact Friday!

Fresh Veggies Day is celebrated on June 16 to commemorate the nutritional value of fresh vegetables and their importance to human health. Fresh vegetables are the best sources of micronutrients that are vital for metabolism, growth, development, and disease prevention. According to “Food & Wine” magazine, there is no such thing as a bad vegetable. Some may need extra work to remove an outer shell or be peeled, and some fare better when cooked. However, there is no reason not to eat fresh vegetables every day.

A diet rich in vegetables and fruits can lower blood pressure, reduce the risk of heart disease and stroke, prevent some types of cancer, lower risk of eye and digestive problems, and have a positive effect upon blood sugar, which can help keep appetite in check.

With just a little effort, this day should be easy for us all to celebrate as there is no better time of year to find fresh veggies. Whether you have choices right outside your door in your own garden or prefer to rely on your local farmer’s market you can rely on fresh veggies this time of year to fill your plate and your nutritional needs.

I challenge all of us to take this day to heart and remember that we could all benefit by eating more fresh veggies, it certainly could not hurt anything. Today we salute America’s produce farmers and the best way to support them, is by buying from them. So, when you can’t find it locally grown, make sure that you check those country-of-origin labels in the grocery store.

Karina ranches with her husband, Marty, and 4 children near Broken Bow, NE. She grew up in western NE, with roots also in southwest SD. The cattle industry and raising kids is her passion.

Watching the cattle industry go the path that it has gone, she could no longer sit quietly at home checking cows, fixing fence, and doing all the everyday tasks wondering when some else was going to make it all better. As she became more active and outspoken on industry issues, she was asked to join the R-CALF USA staff in September 2020 as the Checkoff Petition Campaign manager. That position transcended into her current role as full time Field Director for R-CALF USA.
