Karina Jones is a real-life ranch wife in the Nebraska Sandhills and one of the most highly sought-after speakers in the cattle industry nationwide!

Anyone starting the week with the munchies? Well, I’m hear to celebrate a tasty whole grain treat today on Ranch Raised.

Today is National Popcorn Day! My family loves popcorn so I knew I had to get behind celebrating this! In fact, my kids love getting popcorn seasonings and toppings in their Christmas stockings to enjoy throughout the winter.

Popcorn is a centuries old snack dating back to the Aztecs in the 16th century. Many people don’t realize it, but popcorn is a whole grain food, making it naturally high in several important nutrients, plus it is so affordable. There are a few health benefits to eating popcorn. In addition to being high in fiber, popcorn also contains phenolic acids, a type of antioxidant. In addition, popcorn is a whole grain, an important food group that may reduce the risk of diabetes, heart disease, inflammation and hypertension in humans.

Today, Americans consume 13 billion quarts of popcorn a year, more than any other country in the world. A majority of the popcorn produced in the world is grown in the United States. Nebraska leads the corn belt in popcorn production. I am almost always able to find locally grown popcorn since I live in Nebraska. Just keep it simple and buy the whole kernels and throw a 1/3 cup of kernels in a  brown paper bag to microwave or put it them in a skillet, with some melted butter or oil in the bottom and place the lid on it and have a popping’ good time!

About Karina Jones 477 Articles
Karina ranches with her husband, Marty, and 3 daughters near Broken Bow, NE. She grew up in western NE, with roots also in southwest SD. The cattle industry and raising kids is her passion. Watching the cattle industry go the path that it has gone, she could no longer sit quietly at home checking cows, fixing fence, and doing all the everyday tasks wondering when some else was going to make it all better. As she became more active and outspoken on industry issues, she was asked to join the R-CALF USA staff in September 2020 as the Checkoff Petition Campaign manager. That position transcended into her current role as full time Field Director for R-CALF USA. You can hear her almost every Friday on Your Ag Network’s Hot Barn Report that is broadcast on 60 radio stations with coverage in 9 states, where she deep dives into cattle industry issues and highlights R-CALF’s work on industry reforms. Listen to Ranch Raised on a Your Ag Network hometown station or www.youragnetwork.com where she talks about her daily life on the ranch. Cattle producers are her people. She will meet you at the county fair, at the sale barn, or anywhere the dusty trail leads.
