I am not running a commercial laying operation. I have 10 hens. One is older than some of children, her name is Ancient Red. One is a little lavender banty that pretty much gets a free ride because she is cute. So that leaves me 8 productive hens who average giving me 6-7 eggs a day. This week I am going to focus on recipes that help me and you use up eggs!
Jones Ranch Blooming Breakfast Cups are a hit out our house!
They are a simple breakfast creation that only has 4 simple ingredients, is packed with protein, can be easily adapted, and turns out amazing.
Preheat your oven to 385 degrees. Use a nonstick spray on a muffin tin. This recipe made 6 Blooming Breakfast Cups but can be easily adapted for more. Roll up 3 regular flour tortillas together and cut into 6 “rolls”. Place each roll in a spot in your standard muffin pan. Whisk up 6 eggs and pour evenly over each tortilla roll in the pan. Add 1-2 Tablespoons of your choice of meat, I used browned sausage but ham, bacon, or even ground beef would be great. Top with your choice of shredded cheese. Bake for 12-15 minutes until the eggs are set.
I let them cool and they pulled perfectly out of each cup! I enjoyed mine with some of the salsa I preserved this summer. This is a breakfast my whole family enjoys together at the table or can be easily eaten grab and go style! Grab this recipe and others on the Your Ag Network website.
