Ranch Raised with Karina Jones - Smoked Tri-Tip Recipe!

Karina Jones is a real-life ranch wife in the Nebraska Sandhills and one of the most highly sought-after speakers in the cattle industry nationwide!

The clock is running down on Beef Month, so I thought I would share a beef recipe from one of our loyal listeners! 

This is a recipe that was shared from a friend in Georgia. Dave Walker and his family have been so sweet as to send my family a big box of Georgia goodies last year and he has shared his recipe for beautiful Tri-tip cut of beef.  

Dave Walker starts with the tri-tip marinade which had my mouth watering! In a big ziplock bag combine:  

3 limes and 1-2 lemons squeezed, throw the rind and all in there. 

2 teaspoons of (Ricks) Salt 

Cumin 

Cayenne pepper if you want a little spice 

3-4 Chopped fresh Jalapeños 

1 beer or pop (Dave says beer seems to make it more tender) 

A shot of orange juice if you have some handy  

Chopped cilantro  

Black pepper to taste 

 

Add the tri-tip to the bag and let it hang out in the fridge for a few days. 

 

This is important  

Sear on high heat in the smoker for 5 minutes or so on each side. 

Reduce heat to 300 ish cook to an internal temp of 125-130 (no more or it is tough).  Remove tri-tip from your smoker, wrap in foil or butcher paper and a bath towel for 20-30 minutes. They put it all in a small cooler while it hangs out for this time. You might want to watch a YouTube video on how to properly slice a tri-tip because there is a bit of science, meat science that is, behind the correct technique!
