Karina Jones is a real-life ranch wife in the Nebraska Sandhills and one of the most highly sought-after speakers in the cattle industry nationwide!


The zucchini are in season and I have a recipe for you that everyone will love. Thanks for tuning in today for this Lemon Zucchini Muffin Recipe, today on Ranch Raised!

Lemon-Blueberry-Zucchini Muffins

Ingredients:
2 cups of flour
1/2 tsp salt
2 tsp baking powder
2 eggs
1/2 cup canola oil
2 T lemon juice
1 1/3 cup sugar
1/2 cup milk
15 drops lemon essential oil (in place of lemon zest)
1-2 cups of grated zucchini depending on how much you like and how wet your zucchini is.
You can also add a cup of blueberries from a yummy blueberry lemon flavor combo!

Instructions:
1. Preheat oven to 350 degrees Fahrenheit. Spray muffin pan with a non stick spray.
2. Mix dry ingredients.
3. In a separate bowl, beat eggs. Add oil and sugar and blend well. Add lemon juice, milk, and lemon essential oil. Fold in zucchini.
4. Add dry mix to wet ingredients and fold until combined.
5. Pour batter into muffin tins or loaf pans.
6. Bake at 350 for 20 minutes or until a toothpick pulls out clean.

These make great freezer muffins that kids can pull out on busy school mornings!
