Karina Jones is a real-life ranch wife in the Nebraska Sandhills and one of the most highly sought-after speakers in the cattle industry nationwide!

 

I’m really about to give you a mid-week gift, I mean a mid-week treat of the chocolate variety!
I have been making and sharing my Buckaroo Brownie recipe for years. Chances are if you have ever been a part of the crew that works cattle at our ranch, Buckaroo Brownies are always on the menu, especially if I am serving lunch somewhere out in a pasture. This is also a favorite when an event calls for me to bring individually wrapped baked goodies. Okay, without further a due, here is my Buckaroo Brownie Recipe:

Whisk 5 eggs, see why I love this recipe!!! Yes, whisk 5 eggs with 2 cups of sugar, 1 cup of canola oil and 1 teaspoon of salt. Fold in ½ cup of baking cocoa and 1 ¾ of flour. I also fold in ½ cup of semi-sweet chocolate chips. Pour into your 9×13 baking pan or special brownie pan. This is where I add another ½ cup of semi-sweet chips to the top, but feel free to get creative and add crushed peppermints or walnuts to the top. You do you, no judgment here! Bake at 350 for 30 minutes or until you can insert a tooth pick in the middle and it pulls out clean. If you are baking in the brownie pans it will probably take around 12 minutes. With 5 eggs, it is practically a protein bar, so file it in your recipe box accordingly.
