Since St Patty’s Day just happened to fall on Fun, Fact Friday I thought I would highlight an Irish holiday favorite, CABBAGE!

There are 3 types of cabbage red, green and savoy. The per person annual consumption of fresh cabbage in 2016 averaged 5.8 pounds per person and 1.3 pounds of canned kraut.

Although cabbage is grown throughout the United States, 78 percent of the nation’s total cabbage is grown in five states, California, Wisconsin, New York, Florida, and Texas.

In 2020, the USA harvested 58,600 acres with an average yield of over 40,000 lbs per acre. (USDA ERS, 2021). Despite our best attempt to fill domestic consumption, we still import a lot of cabbage.

Based on most recent production and wholesale price averages, the estimated gross value per acre of fresh market is $8,630 per acre. Cabbage is labor intensive because it is hand-harvested and field packed.

My husband’s favorite side dish is homemade coleslaw. And of course, a Runza or Bierock is not complete without cabbage in it!
