I am ready to share another recipe and this one doesn’t even include the Holy Trinity of butter, sugar, and eggs. Yes, believe it or not, I do crank food out of my kitchen that isn’t baked or sweet. I knew you were beginning to wonder.
When I moved to these parts of central Nebraska after college to be with my now husband. This salad was frequently at potlucks and always brought by my friend, Kim, a neighborhood farm wife who knew how to feed her crew!
This was THE salad that was always scooped clean by the end of the night! Kim taught me how to make her taco salad and honestly it was probably the first recipe I adopted outside of what I knew from my family growing up.
It is a branding season tradition for this taco salad to be on my spread. And whether the crew is eating at my dining table or I have to pack lunch out to a pasture, this taco salad is always on the menu and has come to be expected by my crew when they come to the Jones Ranch!
Everyone is always looking for new fresh ideas of what to serve their crew and this salad breaks the mold of a traditional pasta or potato salad. You can do a bunch of the prep days before and throw it together right before serving. It is hearty and makes a lot, so it checks all the boxes for me.
