There are so many different types of home cooks. I have always aspired to be one of those batch, freezer meal making mommas that makes a months’ worth of meals on a Sunday afternoon. But the truth is, I am so far from it. About as far as I go to utilizing my freezer as appliance for meal storage is making up some pies to have on hand for brandings and storing the frozen store-bought pizzas.
I am in that weird part of the domesticated population that would make the freezer meals and then forget about them until 2026. Actually, I’m exaggerating. My husband would be reminding me of my good intentions when we went to clean out the freezers to make room for the next butchered cow.
This is why I love the good ole beef roast. Pull it out of the freezer. Plop it in the crockpot before bed. Cover with water and add a heaping tablespoon of Better than Bullion. Set it on low and let that Crockpot work its magic while you sleep. You wake up to the heavenly aroma of beef filling your home and the satisfaction of lunch and supper being ready!
While ease of preparation ranks among the top reasons I love cooking roasts, the top reason I love to cook them is because of the endless meal options. You didn’t actually think I just served a pile of potroast next to boiled potatoes, like grandma did? Oh no, that shredded beef is a blank canvas and I am Picasso!
