Karina Jones is a real-life ranch wife in the Nebraska Sandhills and one of the most highly sought-after speakers in the cattle industry nationwide!
Has anyone else declared it “soup season”? Welcome back to Ranch Raised!
Is it just a midwest “thing” or does anyone else agree that when the temps start to drop it just feels right to have a good ole soup simmering away on the stove?
Hands down, the unanimous family favorite soup in my home is cheesy potato. Sometimes with bacon, sometimes with ham, and even once in a while with sausage. We all like beef and noodles and nobody turns down a bowl of chicken and noodles. A few of us are chili lovers or taco soup enjoyers, especially if I make up a pan of fresh cinnamon rolls to enjoy along side.
There is another soup that has been on mind because it reminds me of my grandma Wanda, her favorite, and what I will be simmering up this week, Beef & Barley soup. My grandma was a woman that grew up in western Nebraska during some very tough times. I would imagine that soups were a great way to creatively use what they had on hand and put a nutritious meal on the table.
As dry as it is in my area and with the way I feel when I go to the grocery store, I feel closer and closer to how she grew up as a child, so maybe that has me a bit nostalgic. Barley is a rustic grain that dates back to colonial times in America. And you all know how much I love history.
So, as I have always loved connecting with my roots, my favorite place to do that is in the kitchen.
You can find my recipe for Beef & Barley soup on the Your Ag Network website and app under the Ranch Raised Recipe Book. Have a great day!
Karina ranches with her husband, Marty, and 4 children near Broken Bow, NE. She grew up in western NE, with roots also in southwest SD. The cattle industry and raising kids is her passion.
Watching the cattle industry go the path that it has gone, she could no longer sit quietly at home checking cows, fixing fence, and doing all the everyday tasks wondering when some else was going to make it all better. As she became more active and outspoken on industry issues, she was asked to join the R-CALF USA staff in September 2020 as the Checkoff Petition Campaign manager. That position transcended into her former role as full time Field Director for R-CALF USA.

Cattle producers are her people. She will meet you at the county fair, at the sale barn, or anywhere the dusty trail leads.
