For the first many years of being with my husband money was tight. I would check my bank account balance before grocery shopping and I would count every penny in that store. Turns out those years were a training ground for more times in our lives when I would have to lean on those skills to put a meal on the table, for more people, while watching my budget. And now, it is basically a way of life. I know that grocery shopping has been painful for many, the last few years. I am the first to admit that I have had to adjust my sails in those aisles to stay within a budget, while feeding more mouths. I am finding the most value for my dollar in the perimeter aisles and it turns out that is also where the best nutrition is also found. I am leaning more on raw ingredients than convenience foods.
I have taken additional steps to budget my time, within my week, to make all our bread products. I haven’t purchased store bought bread or buns in months. You can bet with having all my kids home every day, homeschooling, they want snacks. We have enjoyed mastering the skill of granola bar and cracker making, in between enjoying seasonal fruits and veggies for snacks.
But above all, the age-old skill of looking at your weekly grocery store ad and meal planning your week around that good deals will never go out of style. I’m here to tell you, I am right here with you making those choices.
Karina ranches with her husband, Marty, and 4 children near Broken Bow, NE. She grew up in western NE, with roots also in southwest SD. The cattle industry and raising kids is her passion.
Watching the cattle industry go the path that it has gone, she could no longer sit quietly at home checking cows, fixing fence, and doing all the everyday tasks wondering when some else was going to make it all better. As she became more active and outspoken on industry issues, she was asked to join the R-CALF USA staff in September 2020 as the Checkoff Petition Campaign manager. That position transcended into her former role as full time Field Director for R-CALF USA.
