Karina Jones is a real-life ranch wife in the Nebraska Sandhills and one of the most highly sought-after speakers in the cattle industry nationwide!

It has been said that the mulberry is the queen of the trees and in that case, I’m bringing you a royal treat, right here on Ranch Raised. 

Because we have so many mulberry trees on our ranch our berry picking season can usually last a couple of weeks as waves of fruits ripen from the higher hills to the lower canyons. This serves our indulgence well. 

I love to use mulberries in place of blueberries in muffins and banana bread and even making mulberry sauce for ice cream or cheesecake. But this past weekend my creativity ran wild when I found a recipe that I modified into Mulberry Cheesecake Cookies.  

Start by whipping 4 oz of room temp cream cheese, 1 egg, ½ cup of butter and 2 teaspoons of clear vanilla together. Cream in 1 cup of sugar. Then gently combine ½ teaspoon of salt, ½ teaspoon of baking powder and 1 ½ cups of flour. Once all dry ingredients are incorporated, gently fold in 1 ½ cups of fresh mulberries be careful not to break them up too much.  

Bake in a 375 degree oven for 10 minutes or until the edges of the cookie are slightly crispy. They are so yummy; this will become a family favorite.
