Karina Jones is a real-life ranch wife in the Nebraska Sandhills and one of the most highly sought-after speakers in the cattle industry nationwide!

Anyone like me looking for meal ideas to break up the usual rotation? Well, you are in the place, so thanks for joining me today on Ranch Raised. 

I am as guilty as anyone of using the same meals in rotation and making them the same way, especially when I’m using the majority of my brain cells these to days to take care of kids, cows, and all the other things. 

Today’s revelation that it is National Mushroom Day was kind of serendipitous as I’ve had a container of mushrooms staring me down every time I open my veggie drawer in the refrigerator. Mushrooms are a great low cholesterol, low sodium way to bring a new flavor profile to some of your favorite dishes. 

A review of mushrooms as a potential source of dietary vitamin D (Nutrients, 2018) found that vitamin D enhanced or UV-light exposed mushrooms are the only non-animal food product with substantial amounts of bioavailable vitamin D!  

My family loves beef stroganoff, so why not add in some mushrooms! A mushroom Swiss burger or sautéed mushrooms and onions can elevate a backyard grill party with a fraction of the cost of eating out.  

So my mushroom hack today for lunch was adding these little gems as a pizza topping! I have always wanted to be one of those mushroom hunters who found them in the wild, but I’ve never had much luck here on the Jones Ranch, so I guess I will have to keep hunting them in the produce aisle of my local grocery store.
