Get ready for all the flavors of fall in a cookie! I’m sharing my Apple Oatmeal cookie recipe today on Ranch Raised! Need to print it off? You can find it on the Your Ag Network App or website! 

 

Preheat oven to 350°F and prepare two cookie sheets with parchment paper or non-stick silicone baking mats. Stir together 2 ½ cups of old fashioned oats, 2 1/3 cups of flour, 1 tablespoon of baking powder, 1 teaspoon of baking soda, 2 teaspoons of cinnamon, and 1 teaspoon of salt in a medium mixing bowl and set aside. 

In a separate bowl, add ¾ cup melted butter, 1/3 cup of applesauce, 1 ½ cups of sugar, and teaspoon of vanilla. Whisk to combine. Add 2 eggs one by one, whisking as you go, until batter is smooth. Slowly begin to fold the dry ingredients into your bowl of wet ingredients, stirring until well combined. Your batter should be thick and easy to form into 1 1/2 inch balls.  Place balls of dough on cookie sheet and flatten slightly. Bake for 10-12 minutes. 

Combine cinnamon icing ingredients of 2 cups of powdered sugar, 1 teaspoon of cinnamon, 4 tablespoons of milk, and 1 ½ teaspoons of vanilla. Allow cookies to cool before drizzling icing over the top. 

I didn’t have much respect for a cookie that didn’t include chocolate in it, until I made this dandy! Now, we can’t get enough of these Apple Oatmeal cookies!
