I have been reading up on smoking boneless beef roasts. As we head into the busy summer months, I can’t be left relying on expensive lunch meat to feed my family. But now, I have found my solution! Yesterday I smoked a sirloin tip roast but I am looking forward to trying other boneless roasts in my freezer like the Pike’s Peak or tri-tip

I seasoned the roast generously with Rick’s Seasoning Salt of course, but you use your favorite rub or blend. I placed it on the smoker at 250 degrees. This was a 3-4 pound roast so it took around 4 hours to reach an internal temp of 160 degrees and it was PERFECT! I am looking forward to putting a couple of roasts on the smoker at a time, then slicing to use in place of lunch meat. In fact, my girls have already requested I use this sliced, smoked roast beef for their sack lunches this week for their field trips.

I also like the idea of cubing some of the smoked meat up to throw in hashbrowns for a hearty breakfast. And how about smoked beef salad sandwiches! YUM!
