I have officially picked my first batch of rhubarb for 2023 and the first strawberry rhubarb crisp was pulled out of the oven yesterday at 4 pm, just in time for girls to enjoy an after-school snack.

These spring days in farming and ranching are long and grueling. Your to do list never gets any shorter and it feels like you are running a sprint all day every day. The best way I know to bring my family back to center for just a short while is at the dinner table with a good meal.

I grew up watching my grandma pick rhubarb and always have a rhubarb dessert at the ready. My rhubarb plants were split and dug from hers and I am sure that these rhubarb plants actually go back a few generations in our family. While most people value their diamonds and gold, I guess I am just odd and count my grandma’s rhubarb as one of my most prized possessions.

Our days here in central Nebraska have been especially trying. We are extremely dry. The dirt blows every day . The grass doesn’t seem to be growing and the feed piles are running thin. Burdens and decisions are mounting heavier and heavier with each sunset.

My husband loves anything with rhubarb in it and my girls have followed right along. So, if I can brighten the end of these hard days with a little rhubarb dessert then that is exactly what I will do. Tune in tomorrow and I will be happy to share with you my recipe for rhubarb crisp. It’s not an exact recipe. It’s from the heart, just like my grandma taught me.

Karina ranches with her husband, Marty, and 4 children near Broken Bow, NE. She grew up in western NE, with roots also in southwest SD. The cattle industry and raising kids is her passion.

Watching the cattle industry go the path that it has gone, she could no longer sit quietly at home checking cows, fixing fence, and doing all the everyday tasks wondering when some else was going to make it all better. As she became more active and outspoken on industry issues, she was asked to join the R-CALF USA staff in September 2020 as the Checkoff Petition Campaign manager. That position transcended into her current role as full time Field Director for R-CALF USA.
