Our family split up this weekend to divide and conquer! My husband took my older girls, heifers, and goats to the Nebraska State Fair for the FFA show weekend. By all accounts they had a great time together, but came home pretty darn tired. I’m just a few short weeks away from having this baby, and thought it was best that I stay home, try to stay off my feet and try to avoid becoming an exhibit in the Nebraska State Fair Birthing Pavilion. Although, I’m sure those vet students would take great of me!

So with my youngest daughter and I home to hold down the fort, do the barn chores, care for the garden and all the other things, our biggest accomplishment was getting all the peaches canned and half the pears I had. I still have another lug of pears that need to ripen a few more days before they are preserved.

Let me tell you, my 7-year-old is a 5-star peach peeler! From blanching to peeling to taking out the scrap bucket, that girl was a life saver for me this weekend and saved me hours on my feet. Today I will take all the leftover peach syrup and can it. I have one girl that has a strong affection for peach syrup on her pancakes and in her iced tea. So peach syrup is a real treat around here! It looks like I still have jars of peach jam in the pantry, so I can skip that task this year.

I made double use of my canning time. Come back tomorrow, I’m gonna share with you some lessons from a podcast I listened while canning to that I just cannot stop thinking about!

Karina ranches with her husband, Marty, and 3 daughters near Broken Bow, NE. She grew up in western NE, with roots also in southwest SD. The cattle industry and raising kids is her passion.
