

Karina Jones is a real-life ranch wife in the Nebraska Sandhills and one of the most highly sought-after speakers in the cattle industry nationwide!
It’s meal stocking and calving season survival mode around here which requires special attention to meal planning! This year our family will not be at the same roof during calving season. We will be split between two different ranches, 230 miles a part, one ranch is 20 miles from a grocery store and the other one nearly 30, and the head chef can only be at one kitchen, if you know what I mean. So I have been creatively brainstorming ways that both parties can be well stocked to feed whomever is at that respective table.
I am currently in non stop baking mode! I have taken the concept of the classic bierock, a bread dough pocket filled with a ground beef, cabbage, and onion mixture and reimagined it a thousand ways till Sunday. You can use my classic bread dough recipe that is on the Ranch Raised Recipe book and then let your imagination run wild. One batch of my bread dough makes 16 pockets. Or you can buy frozen dinner rolls to use. Our current family favorite is the pizza pocket with ground beef mixed with pizza or spaghetti sauce. I add in a few pepperonis and mozzarella cheese. I did a BBQ beef set with cheddar cheese. I am really proud of my burrito filled ones with taco meat, kidney beans, corn, and pepper jack!
For breakfast type I am doing ham, cheese, & scrambled egg and sausage gravy pockets!
These pull out fast from the freezer and can be warmed up in 2 minutes to be enjoyed at the table or in the calving barn!

Karina ranches with her husband, Marty, and 4 children near Broken Bow, NE. She grew up in western NE, with roots also in southwest SD. The cattle industry and raising kids is her passion.
Watching the cattle industry go the path that it has gone, she could no longer sit quietly at home checking cows, fixing fence, and doing all the everyday tasks wondering when some else was going to make it all better. As she became more active and outspoken on industry issues, she was asked to join the R-CALF USA staff in September 2020 as the Checkoff Petition Campaign manager. That position transcended into her former role as full time Field Director for R-CALF USA.
