Jones Ranch Blooming Breakfast Cups, a new recipe coming up today on Ranch Raised!

The last couple of years I have become more intentional about what we eat and that does start at the grocery store. In an effort to suppress our sugar consumption, I simply do not buy commercial cereals or sugary breakfast foods. 

Today I have a simple breakfast creation that only has 4 simple ingredients, is packed with protein, can be easily adapted, and turns out amazing.

Preheat your oven to 385 degrees. Use a nonstick spray on a muffin tin. This recipe made 6 Blooming Breakfast Cups. Roll up 3 regular flour tortillas together and cut into 6 “rolls”. Place each roll in a spot in your muffin pan. Whisk up 6 egg and pour evenly over each tortilla roll in the pan. Add 1-2 Tablespoons of your choice of meat, I used browned sausage but ham, bacon, or even ground beef would be great. Top with your choice of shredded cheese. Bake for 12-15 minutes until the eggs are set. 

I let them cool and they pulled perfectly out of each cup! I enjoyed mine with some of the salsa I preserved this summer. My husband grabbed his and headed out the door to jump in the tractor to go feed! And we all declared this breakfast a winner!
