Ranch Raised with Karina Jones - Lemon Zucchini Muffin Recipe!

Karina Jones is a real-life ranch wife in the Nebraska Sandhills and one of the most highly sought-after speakers in the cattle industry nationwide!

Thanks to some neighbors sharing their bounty of zucchini, we had a big baking weekend around here. We made a double batch of these Lemon Zucchini Muffins, and I just couldn’t wait to share the recipe with all of you! 

Ingredients:
2 cups of flour
1/2 tsp salt
2 tsp baking powder
2 eggs
1/2 cup canola oil
2 T lemon juice
1 1/3 cup sugar
1/2 cup milk
15 drops lemon essential oil (in place of lemon zest)
1-2 cups of grated zucchini depending on how much you like and how wet your zucchini is. 

We also added a tablespoon of poppyseeds this time but you can also add a cup of blueberries for a yummy blueberry lemon flavor combo! 

Instructions:
1. Preheat oven to 350 degrees Fahrenheit. Spray muffin pan with a non stick spray.
2. Mix dry ingredients.
3. In a separate bowl, beat eggs. Add oil and sugar and blend well. Add lemon juice, milk, and lemon essential oil. Fold in zucchini.
4. Add dry mix to wet ingredients and fold until combined.
5. Pour batter into muffin tins or loaf pans.
6. Bake at 350 for 20 minutes or until a toothpick pulls out clean. 

We put a couple dozen away in the freezer for a fast and easy breakfast option on busy mornings!
