There are hungry spring crews to feed and well, it’s National Raisin Day, so let’s celebrate right here today on Ranch Raised!
It seems to me that most people either love or hate raisins! If given a buffet of cookie choices, I would put my money on the Oatmeal Raisin being the cookie that my husband would pick up first. And I shamelessly admit, I do not make him Oatmeal Raisin cookies nearly often enough. I do keep them in my pantry for snacking and he has our little boy holding his hand for those sweet treats! With today being a dual holiday National Raisin and National Oatmeal Raisin Cookie Day, I better share my recipe for his favorite cookies!
Cream together ¾ cup butter, softened, ¾ cup white sugar, ¾ cup packed light brown sugar, 2 large eggs, and 1 teaspoon vanilla extract until it is light and fluffy. Fold in 1 ¼ cups all-purpose flour, 1 teaspoon baking soda, ¾ teaspoon ground cinnamon, ½ teaspoon salt, 2 ¾ cups rolled oats and the star of the show 1 cup raisins!
I like to chill my dough before putting it on a greased cookie sheet with a cookie scoop. Bake at 350 for around 8- 10 minutes.
