I’m springing in here with a brand-new Fun, Fact Friday, so thanks for joining me right here on Ranch Raised!

Who knew that March was National Celery Month? News to me, so I’m happy to bring the facts to you!

Per serving, the crunchy vegetable has 16 calories. It’s a good source of fiber, potassium, and vitamins A and C. Add it to snacks to benefit from its anti-inflammatory qualities.

Celery is not a superfood but it is the perfect complement to a healthy diet. Seasoned right, celery can stand out with a flavor all its own. Chop up a few extra sticks and store them in an airtight container, and place them in the refrigerator. They will keep crisp for at least two days. You can add peanut butter, avocado, or sour cream-based dips to compliment them. The celery will lose quality after that, but you can still enjoy them or use them in soups or other recipes.

While many enjoy it fresh, celery also goes well into a cooked meal. My grandma added celery to a lot of her soups like her Beef and Barley soup. You can find the recipe on the Your Ag Network app or website. She always told me that celery added natural salt to a soup. So, I’ve always done just like grandma.

As we are all beginning to dream about our gardening days ahead, I want to challenge you to plant celery! I buy the plugs or little plants from the greenhouse. Eating homegrown celery is truly a flavor explosion like you never knew celery was capable of! So that is my challenge to all of you! Just leave me a few plants, I’m usually late to the greenhouses.

Watching the cattle industry go the path that it has gone, she could no longer sit quietly at home checking cows, fixing fence, and doing all the everyday tasks wondering when some else was going to make it all better. As she became more active and outspoken on industry issues, she was asked to join the R-CALF USA staff in September 2020 as the Checkoff Petition Campaign manager. That position transcended into her current role as full time Field Director for R-CALF USA.
